Mini Blueberry Banana Crumb Cakes
Ingredients
- 1/2 cup regular or gluten free all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 egg
- 2 tablespoons cooking oil
- 1/4 cup mashed banana
- 3 tablespoons light brown sugar
- 1/3 cup fresh blueberries
- Crumb Topping Ingredients
- 2 tablespoons regular or gluten free flour
- 2 tablespoons light brown sugar
- 1 tablespoon melted butter
Directions
- Preheat oven to 350°, spray two 4 inch ramekins with cooking spray, set aside.
- In a medium mixing bowl mix together completely the egg, mashed banana, light brown sugar, and cooking oil.
- Mix in the flour, baking powder, baking soda, beat everything together with a fork for about a minute.
- Fold in the blueberries, pour batter into the ramekins evenly divided.
- Mix the crumb topping ingredients together and divide evenly on top of the batter.
- Bake in the preheated oven for about 25 minutes, or until toothpick inserted in center comes out clean.
- Set on cooling rack, when cooled take out of ramekins and set on serving dishes if you like. Serve and Enjoy!
