Mini Blueberry Banana Crumb Cakes

Ingredients

  • 1/2 cup regular or gluten free all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 egg
  • 2 tablespoons cooking oil
  • 1/4 cup mashed banana
  • 3 tablespoons light brown sugar
  • 1/3 cup fresh blueberries
  • Crumb Topping Ingredients
  • 2 tablespoons regular or gluten free flour
  • 2 tablespoons light brown sugar
  • 1 tablespoon melted butter

Directions

  • Preheat oven to 350°, spray two 4 inch ramekins with cooking spray, set aside.
  • In a medium mixing bowl mix together completely the egg, mashed banana, light brown sugar, and cooking oil.
  • Mix in the flour, baking powder, baking soda, beat everything together with a fork for about a minute.
  • Fold in the blueberries, pour batter into the ramekins evenly divided.
  • Mix the crumb topping ingredients together and divide evenly on top of the batter.
  • Bake in the preheated oven for about 25 minutes, or until toothpick inserted in center comes out clean.
  • Set on cooling rack, when cooled take out of ramekins and set on serving dishes if you like. Serve and Enjoy!
