Mini Oatmeal Chocolate Chip Bundt Cakes

Ingredients

  • 1/3 cup regular or gluten free all purpose flour
  • 1/4 cup quick oats
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 egg
  • 3 tablespoons plain yogurt
  • 2 tablespoons sugar
  • 3 tablespoons light brown sugar
  • 2 tablespoon cooking oil
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons chocolate chips

Directions

  • Wipe inside of bundt maker with cooking oil or spray. Plug in mini bundt maker to heat up.
  • In a medium mixing bowl add the egg, sugar, yogurt, cooking oil, and vanilla extract, beat together with a fork.
  • Add the flour, quick oats, baking powder, and baking soda stir until mixed in and then beat for about a minute with fork. Fold in chocolate chips
  • Pour half of the batter into mini bundt maker, close lid and bake for about 7 minutes or cook until toothpick entered in cake comes out clean.
  • With pot holders lift out cake by the plate handles, set on cooling rack.
  • After cooled drizzle with your favorite glaze or frosting.
  • Sprinkle the top with a few chocolate chips, Serve and Enjoy!
