Blueberry Lemon Yogurt Waffles
Ingredients
- 1/2 cup baking mix, regular or gluten free
- 1 egg
- 1/4 cup plain yogurt
- 1 tablespoon cooking oil
- 1/2 cup fresh blueberries
- 1/2 teaspoon lemon extract
Directions
- Plug in and heat up mini waffle maker, brush with oil.
- Mix together egg and yogurt, cooking oil, and lemon extract,
- Stir in baking mix until blended together, Fold in blueberries.
- Pour batter in heated waffle maker, cook for a few minutes until golden brown.
- Repeat with remaining batter, should make 5-6 waffles.
- Serve with lemon glaze, and extra fresh blueberries. Enjoy!
Lemon Glaze
- 1 cup powdered sugar
- 2 tablespoons milk, more or less depending on consistency you like
- 1/2 teaspoon lemon extract
- Mix everything together and drizzle over waffles.
