Blueberry Lemon Yogurt Waffles

Ingredients

  • 1/2 cup baking mix, regular or gluten free
  • 1 egg
  • 1/4 cup plain yogurt
  • 1 tablespoon cooking oil
  • 1/2 cup fresh blueberries
  • 1/2 teaspoon lemon extract

Directions

  • Plug in and heat up mini waffle maker, brush with oil.
  • Mix together egg and yogurt, cooking oil, and lemon extract,
  • Stir in baking mix until blended together, Fold in blueberries.
  • Pour batter in heated waffle maker, cook for a few minutes until golden brown.
  • Repeat with remaining batter, should make 5-6 waffles.
  • Serve with lemon glaze, and extra fresh blueberries. Enjoy!

Lemon Glaze

  • 1 cup powdered sugar
  • 2 tablespoons milk, more or less depending on consistency you like
  • 1/2 teaspoon lemon extract
  • Mix everything together and drizzle over waffles.
