Ground Chicken Burrito Rice Bowl

Ingredients

  • 1 pound lean ground chicken
  • 1 cup chicken broth
  • 2 teaspoons ground cumin, 2 teaspoons paprika, 1 teaspoon chili powder
  • 1 teaspoon onion powder, 1 teaspoon garlic powder
  • 1 can pinto beans, drained and rinsed, about 15 ounce
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes, fresh
  • 1 avocado cubed or sliced
  • 2-3 cups cooked rice, kept warm
  • salt and pepper to taste
  • sour cream and sliced limes

Directions

  • Turn burner on medium, in a skillet add the ground chicken and brown until cooked through.
  • Mix all the dry spices together in a small bowl, sprinkle evenly over cooked chicken, stir in.
  • Add the chicken broth and let cook until liquid has reduced, turn off heat.
  • Heat up pinto beans in microwave, divide and place pinto beans, rice, chicken, cheese, and tomatoes and avocado in dinner size bowls, refer to photo.
  • Serve with sour cream, lime wedges and garnish with green onions if you like.
