Italian Sausage Mozzarella Spinach Omelet
Ingredients
- 2 eggs, beaten with fork
- 1 dinner size fully cooked Smoked Chicken Italian sausage link, sliced and fried in skillet a couple minutes, set aside
- 2 tablespoons shredded mozzarella cheese, plus more to top the omelet
- 1 tablespoon shredded parmesan cheese
- 2 handfuls fresh spinach, cooked in skillet with 2 teaspoons butter, until wilted, set aside
- salt and pepper to taste
Directions
- Turn burner on medium, add a pat of butter to melt in skillet, pour in beaten eggs, let spread out flat, cook for a minute and turn over.
- Top eggs on one half with cooked spinach, cheeses, and some of the sliced cooked sausage.
- Fold over other half of egg on top of the omelet ingredients, cook for a little until eggs are a desired doneness, that you like. Transfer to plate.
- Add sausage slices and more cheese on top, sprinkle with Italian seasoning if you like. Enjoy!
