Mandarin Orange Bundt Cake


This cake taste like a cream cake that you can purchase at the grocery store bakery,  very moist and sweet.  I actually made a little too much glaze, as you can see in the photo.  Spoon excess glaze on your piece of cake if you have a big sweet tooth.

The cake looks like a Christmas holiday cake, don’t you think?  It wasn’t intentional, I didn’t use the holiday FunFetti cake mix…


Mandarin Orange Bundt cake with Almond flavored Glaze

1 box cake mix (funfetti, white, yellow, your choice)

3 eggs

1/4 cup oil

1 can (15 ounce) mandarin oranges, do not drain

Beat together cake mix, eggs, oil.  Pour in can of oranges with juice, stir and mix well.  The oranges will break up into smaller pieces. If you would like oranges to be whole or in bigger pieces, fold in with a rubber spatula.

Pour in to a prepared, sprayed Bundt pan, bake at 350 degrees for 30-35 minutes.  Allow to cool completely before pouring on glaze.

A basic glaze, just powdered sugar and a few tablespoons milk, add a capful of almond flavoring, about 1/2 teaspoon.  I added a little orange rind (optional) on top of cake before glazing…
