Vegetable Stew with Rice
Vegetable Stew with Rice, Carrots, Potatoes, Kale, and Sweet Potatoes
- 32 ounce vegetable broth
- 3 large carrots sliced
- 2 stalks celery sliced
- 1/2 cup chopped onions (optional)
- 2 cups chopped kale or 2 handfuls
- 2 small to medium sweet potatoes, peeled and cut into chunks
- 4 medium regular potatoes, peeled and cut into chunks
- 1/4 cup uncooked rice
- Salt and fresh ground pepper to taste
Pour vegetable broth in to the slow cooker, set on high.
Add Carrots, celery, kale, and onions, cook for about 2 hours, then add potatoes, rice, and sweet potatoes.
Cook for another 1 & 1/2 to 2 hours, until potatoes are done.
Turn slow cooker down to warm setting and Serve.
