Triple Chocolate Avocado Cake




Triple Chocolate Avocado Cake – Gluten Free

  • 1 cup gluten free flour – measure for measure or 1 to 1, etc…
  • 1/2 cup baking cocoa
  • 1/2 cup light brown sugar
  • 1/2 cup mashed ripe avocado
  • 2 eggs
  • 2/3 cup milk
  • 1/4 cup oil
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup chocolate chips or more if you like

Sift together in a bowl flour, cocoa, baking powder, baking soda, set aside

Mix on low speed in a mixing bowl eggs, oil, light brown sugar, avocado, milk, until completely blended

Add dry ingredients to wet ingredients mix on low until completely blended together

Stir in chocolate chips

Pour batter in to a sprayed round or 8×8 square pan

Bake @ 350° for about 35 – 40 minutes

After cake is completely cooled frost with chocolate frosting, making it a triple chocolate cake!
