My Ratatouille with Rice

 


My Version of Ratatouille (with the ingredients I had)

  • 1 cup cut up eggplant
  • 1 cup cut up zucchini
  • 1 cup cut up yellow squash
  • 1/3 cup chopped onions
  • 2 Ripe tomatoes cut up
  • 3 tablespoons Garlic infused olive oil or plain olive oil
  • 3 tablespoons butter
  • 1 teaspoon basil
  • Salt and Fresh ground black pepper to taste
  • Cooked rice ( I make half white and half brown)
  • Chopped green onion tops


In frying pan heat on medium the olive oil and butter

Throw in all the chopped vegetables, except tomatoes, stir and toss around in pan to cook

Add basil and salt and pepper

Saute until vegetables are tender, about 10-15 minutes

Add tomatoes on top stir to heat

Serve over or around rice and top with chopped green onion tops.
