Pesto Shrimp Pasta
Ingredients
- 12 jumbo shrimp or more if using smaller shrimp, shelled and deveined
- 6 ounces pasta cooked to package directions
- 3 tablespoons pesto paste, or home made pesto
- 3 tablespoons butter
- 3 tablespoons olive oil
- 2 teaspoon minced garlic, from jar
- salt and fresh cracked pepper to taste
- a fresh diced tomato
- About 2-3 ounces shredded mozzarella cheese
- sprinkle fresh or dried basil and parsley, for garnish optional
Directions
- In a skillet on medium heat add butter, olive oil, pesto paste, minced garlic, stir to blend.
- Add shrimp toss in skillet until pink all the way thru, about 5 minutes.
- Add cooked pasta and toss everything together, heat through or pour shrimp pesto over hot pasta.
- Top with fresh diced tomatoes and shredded mozzarella cheese.
- Sprinkle with fresh or dried basil and parsley to garnish, optional.
- Serves about 2-3.
