Cranberry and Walnut Mini Loaves

Ingredients

  • 2/3 cup baking mix, regular or gluten free
  • 2 eggs
  • 1/3 cup sugar
  • 1/4 cup milk
  • 1/4 sour cream
  • 1/3 cup dried cranberries
  • 1/3 chopped walnuts
  • 2 mini loaf baking pans/dishes, 3×6

Directions

  • Preheat oven to 350°, spray mini loaf pans with cooking spray, set aside.
  • Soften dried cranberries in a small bowl, pour hot water over top to cover, set aside.
  • In a medium mixing bowl beat the eggs with a fork, mix in the sugar, cooking oil, vanilla, and sour cream, with a fork.
  • Add the baking mix, blend in and beat for about a minute with fork until smooth.
  • Fold in the walnuts, drain the water off the cranberries, fold into the batter.
  • Pour batter into the prepared mini loaf pans, Bake in preheated 350° oven for about 40 minutes.
  • Set on cooling rack to cool. Cut and serve in pans or remove cut and serve. Enjoy!
  • Drizzle with glaze if you like.
