Maraschino Cherry Cake
Ingredients
- 1 cup gluten free or regular baking mix
- 1 egg
- 1/4 cup cooking oil
- 1/3 cup sugar
- 1/4 cup milk
- 1/4 cup maraschino cherry juice from the jar
- 1/4 cup sour cream
- 1/2 teaspoon vanilla or almond extract
- 5-6 cherries cut up in quarters, for top of cake, pat dry with paper towel
Directions
- Preheat oven to 350°, spray a 7 inch round baking pan with cooking spray, set aside.
- In a medium mixing bowl add egg and beat with a fork, add cooking oil, sugar, sour cream, milk, vanilla extract, and cherry juice, beat everything together.
- Add the baking mix, stir until completely blended, pour batter into prepared pan.
- Bake in preheated oven for about 35 minutes. Set on a cooling rack.
- After completely cooled, frost with your favorite butter cream frosting and decorate with cherries.
