Pumpkin Banana Muffins

Ingredients

  • 1 cup gluten free or regular baking mix
  • 1 ripe small to medium banana, mashed
  • 1/3 cup canned pumpkin
  • 1/4 cup light brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1/4 cup oil
  • 1/4 cup milk
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla
  • a few chopped walnuts for top

Directions

  • Preheat oven to 375°, spray a muffin pan with cooking oil, set aside.
  • In a medium mixing bowl add the mashed banana, pumpkin, and egg mix together.
  • Add the sugars, cooking oil, milk, vanilla, and pumpkin pie spice, beat everything together until blended.
  • Stir in the baking mix, completely mix together.
  • Pour batter into muffin pan, makes about 6, bake in preheated oven for about 25 minutes.
  • Set on cooling rack, cool, then drizzle with your favorite glaze on top and sprinkle walnuts on top if you like. Enjoy!
