Pumpkin Banana Muffins
Ingredients
- 1 cup gluten free or regular baking mix
- 1 ripe small to medium banana, mashed
- 1/3 cup canned pumpkin
- 1/4 cup light brown sugar
- 1/4 cup sugar
- 1 egg
- 1/4 cup oil
- 1/4 cup milk
- 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla
- a few chopped walnuts for top
Directions
- Preheat oven to 375°, spray a muffin pan with cooking oil, set aside.
- In a medium mixing bowl add the mashed banana, pumpkin, and egg mix together.
- Add the sugars, cooking oil, milk, vanilla, and pumpkin pie spice, beat everything together until blended.
- Stir in the baking mix, completely mix together.
- Pour batter into muffin pan, makes about 6, bake in preheated oven for about 25 minutes.
- Set on cooling rack, cool, then drizzle with your favorite glaze on top and sprinkle walnuts on top if you like. Enjoy!
