Mini Pizza with Salami & Mushrooms

Ingredients

  • 1/2 cup shredded mozzarella
  • 1 egg
  • 2 tablespoons gluten free baking mix or almond flour
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon garlic powder
  • 3-4 tablespoons pizza sauce or marinara spaghetti sauce
  • Toppings of your choice
  • mozzarella, pepperoni, salami, mushrooms, onion, green pepper, black olives, bacon etc…

Directions

  • Plug in and heat the mini waffle maker.
  • In a medium mixing bowl beat egg with a fork, add mozzarella cheese, Italian seasoning, garlic powder, and flour.
  • Spoon half of the batter into heated mini waffle maker, cook for about 4 minutes, until golden brown. Repeat again. Makes 2, set aside.
  • Preheat oven to broil. Spray baking sheet with cooking spray.
  • Place each chaffle/waffle on baking sheet, spread sauce on top then add your preferred toppings.
  • Place in oven for about 3 minutes or more if needed to melt cheese. Watch closely so not to burn.
