Chocolate Chocolate Loaf Cake
Ingredients
- 1/2 cup gluten free or regular all purpose flour
- 1/3 cup baking cocoa
- 1 teaspoon baking powder
- 1 egg
- 3 tablespoons light brown sugar
- 1/4 cup sugar
- 1/2 teaspoon vanilla extract
- 3 tablespoons cooking oil
- 3 tablespoons milk
- 3 tablespoons hot water
- 1 teaspoon instant espresso powder, mix with the hot water (optional)
- 1/4 cup semi sweet chocolate chips
Directions
- Preheat oven to 350°, spray a 5×9 loaf pan with cooking spray, set aside.
- In a medium mixing bowl sift together the flour, baking cocoa, and baking powder, set aside.
- In another bowl mix together the egg, sugars, oil, vanilla and milk, mix for about a minute or two to blend.
- Add the dry ingredients to the wet ingredients, mix ever together, add the hot water mixed with espresso, stir in until completely mixed.
- Pour batter into the prepared loaf pan, sprinkle chocolate chips on top of batter.
- Bake in preheated oven for about 30 minutes, until a toothpick inserted in middle comes out clean.
- Set on cooling rack, completely cool, drizzle with a glaze if you like. Cut and Serve. Enjoy!
