Chocolate Chocolate Loaf Cake

Ingredients

  • 1/2 cup gluten free or regular all purpose flour
  • 1/3 cup baking cocoa
  • 1 teaspoon baking powder
  • 1 egg
  • 3 tablespoons light brown sugar
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons cooking oil
  • 3 tablespoons milk
  • 3 tablespoons hot water
  • 1 teaspoon instant espresso powder, mix with the hot water (optional)
  • 1/4 cup semi sweet chocolate chips

Directions

  • Preheat oven to 350°, spray a 5×9 loaf pan with cooking spray, set aside.
  • In a medium mixing bowl sift together the flour, baking cocoa, and baking powder, set aside.
  • In another bowl mix together the egg, sugars, oil, vanilla and milk, mix for about a minute or two to blend.
  • Add the dry ingredients to the wet ingredients, mix ever together, add the hot water mixed with espresso, stir in until completely mixed.
  • Pour batter into the prepared loaf pan, sprinkle chocolate chips on top of batter.
  • Bake in preheated oven for about 30 minutes, until a toothpick inserted in middle comes out clean.
  • Set on cooling rack, completely cool, drizzle with a glaze if you like. Cut and Serve. Enjoy!
