Mini White Cakes

Ingredients

  • 1/2 cup gluten free or regular all purpose flour
  • 1/4 cup sugar
  • 2 tablespoons sour cream
  • 1 egg white
  • 1/4 cup milk
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon almond flavor
  • 2 ramekin dishes, 4 inch
  • sliced almonds to garnish

Directions

  • Preheat oven to 350°
  • Cream together sugar and sour cream, add almond flavor, and egg, and milk mix together until blended.
  • Add flour, baking powder, beat with fork for about a minute.
  • Spray two ramekins with cooking spray.
  • Pour batter into cake pan, spread evenly in pan. Batter will be thick.
  • Bake in a preheated oven @ 350° for about 20 minutes or when an inserted toothpick comes out clean.
  • Let cool completely before frosting. I used a butter cream frosting with a couple drops almond flavor added. Garnish with sliced almonds if you like. Enjoy!
