Strawberry Rhubarb Yogurt Mini Loaf Cakes

Ingredients

  • 1/2 cup regular or gluten free all purpose flour
  • 1 teaspoon baking powder
  • 1 egg
  • 1/4 cup strawberry rhubarb yogurt, (noosa)
  • 1/4 cup sugar
  • 1/8 cup milk
  • 1 chopped up fresh strawberry, medium size

Directions

  • Preheat oven to 350°, spray 2 mini loaf pans (6x3x2) with cooking spray, set aside.
  • In a medium mixing bowl add the egg, milk, yogurt, sugar and mix together.
  • Add the flour and baking powder, mix for about a minute to blend everything.
  • Fold in chopped strawberry. Pour batter into the prepared loaf pans.
  • Sprinkle a little sugar on top of batter, (optional), place in preheated oven for about 30 minutes, or until toothpick entered in center comes out clean.
  • Set on cooling rack, serve warm or cold. Drizzle with glaze if you like. Enjoy!
