Small Blueberry Cake
Ingredients
- 1 cup Gluten Free or regular all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 cup sugar
- 2 eggs
- 2/3 cup milk
- 1/2 teaspoon vanilla extract
- 3 tablespoons cooking oil
- 1/3 cup dried blueberries
Directions
- Preheat oven to 350°, spray a 6 or 7 inch round cake pan with cooking spray, set aside.
- In a medium mixing bowl add eggs, sugar, cooking oil, and vanilla, mix together, then add milk blend.
- Add the flour, baking powder, and baking soda, blend in and beat for about a minute.
- Pour batter into prepared cake pan, dust dried blueberries with a little flour in a small bowl, then sprinkle on top of cake batter, swirl in lightly.
- Bake in the preheated oven for about 25 minutes or until toothpick inserted in center comes out clean.
- Set on a cooling rack cool completely. Frost with your favorite homemade or store bought frosting, cut and serve. Enjoy!
