Breakfast Bowl

Ingredients

  • 2 eggs, beaten with a fork
  • 1 cup frozen diced potatoes, thawed
  • 1/4 cup diced green peppers
  • 4 mushrooms, sliced
  • 1 – 2 ounces cheese, cut up or shredded, I used colby jack and swiss
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • salt and pepper to taste

Directions

  • In a medium skillet on medium heat add the olive oil and butter
  • Add in the potatoes, green peppers, and mushrooms. Cook and stir until the potatoes are cooked through and golden brown, about 5 – 7 minutes.
  • Pour in the beaten eggs evenly over potato mixture in skillet and half of the cheese, mix until eggs are to your desired doneness.
  • Spoon everything in to a bowl, add salt and pepper to taste, spread more cheese on top.
  • Optional, serve with couple french toast sticks or a cut up waffle, add a syrup cup and Enjoy!
