Breakfast Bowl
Ingredients
- 2 eggs, beaten with a fork
- 1 cup frozen diced potatoes, thawed
- 1/4 cup diced green peppers
- 4 mushrooms, sliced
- 1 – 2 ounces cheese, cut up or shredded, I used colby jack and swiss
- 2 tablespoons olive oil
- 2 tablespoons butter
- salt and pepper to taste
Directions
- In a medium skillet on medium heat add the olive oil and butter
- Add in the potatoes, green peppers, and mushrooms. Cook and stir until the potatoes are cooked through and golden brown, about 5 – 7 minutes.
- Pour in the beaten eggs evenly over potato mixture in skillet and half of the cheese, mix until eggs are to your desired doneness.
- Spoon everything in to a bowl, add salt and pepper to taste, spread more cheese on top.
- Optional, serve with couple french toast sticks or a cut up waffle, add a syrup cup and Enjoy!
