Country Ham and Potato Casserole
Ingredients
- 2 cups cubed ham
- 4 potatoes washed, cut up, un-peeled or peeled, if you like
- 2 cups milk
- 3 tablespoons flour
- 4 tablespoons butter
- 1 cup cheddar cheese, cut up or shredded
- 2 green onions sliced, white and green separated
- 1 teaspoons onion powder
- 1 teaspoons your favorite seasoning blend
- salt and pepper to taste
- paprika and parsley to garnish top
Directions
- Preheat oven to 375°, spray a 9 inch round or square baking dish with cooking spray.
- Place the potatoes, ham, and cheese, evenly in the prepared baking dish, set aside.
- In a medium skillet on medium low heat, add the butter to melt, whisk in the flour, slowly add in milk and whisk, until it thickens.
- Stir in the spices, salt, pepper, and sliced white part of the onions. Remove from heat.
- Pour evenly over the potato mixture, toss to coat everything, sprinkle top with paprika and parsley.
- Cover with foil and Bake in preheated oven for about 45 minutes. Take off foil, put back in oven to brown top for the last 15 minutes, or until potatoes are tender.
- Sprinkle with green onions and serve. Enjoy!
