Turkey Rice Casserole
Ingredients
- 1 cup cut up leftover turkey
- 2 tablespoons butter
- 2 tablespoons flour
- 1&1/2 cups milk
- 2 teaspoons your favorite seasoning blend
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- salt and pepper to taste
- 1/2 cup shredded parmesan cheese
- 1/2 cup shredded cheddar cheese, I used cracker cut cheddar squares
- 2 cups cook rice
- 1/2 cup frozen peas
Directions
- Preheat oven to 350°, spray an 8×8 square baking pan with cooking spray, set aside.
- Turn stove burner on medium heat, in a medium skillet add butter to melt then add the flour, stir to make a paste, slowly add the milk, whisk until smooth and thickens.
- Turn off heat and add all the spices, and the peas, turkey, shredded parmesan cheese, stir to combine.
- Stir in the rice, salt and pepper, pour into the prepared baking dish, top with the shredded cheddar.
- Bake in the preheated oven for about 20 minutes, until heated through and cheese is melted.
- Serves about 3-4, add extra parmesan on top if you like. Enjoy!
