Turkey Rice Casserole

Ingredients

  • 1 cup cut up leftover turkey
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1&1/2 cups milk
  • 2 teaspoons your favorite seasoning blend
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • 1/2 cup shredded parmesan cheese
  • 1/2 cup shredded cheddar cheese, I used cracker cut cheddar squares
  • 2 cups cook rice
  • 1/2 cup frozen peas

Directions

  • Preheat oven to 350°, spray an 8×8 square baking pan with cooking spray, set aside.
  • Turn stove burner on medium heat, in a medium skillet add butter to melt then add the flour, stir to make a paste, slowly add the milk, whisk until smooth and thickens.
  • Turn off heat and add all the spices, and the peas, turkey, shredded parmesan cheese, stir to combine.
  • Stir in the rice, salt and pepper, pour into the prepared baking dish, top with the shredded cheddar.
  • Bake in the preheated oven for about 20 minutes, until heated through and cheese is melted.
  • Serves about 3-4, add extra parmesan on top if you like. Enjoy!
