Mint Surprise Cookies

Ingredients

  • 3/4 cup regular or gluten free all purpose flour
  • 1/4 teaspoon baking soda
  • 4 tablespoons butter or margarine
  • 1 egg
  • 1/4 cup light brown sugar
  • 1/4 cup sugar
  • about 12 Andes mints unwrapped
  • about 12 walnut halves

Directions

  • Preheat oven to 350°, lightly grease cookie sheet with shortening or margarine.
  • In a medium mixing bowl cream together butter and sugars.
  • Add the egg and mix together, mix in the flour and baking soda.
  • Refrigerate for about 30 minutes, roll in to 12 balls.
  • Spread the dough ball around a mint to cover completely.
  • Set on cookie sheet and slightly press a walnut half on top of dough.
  • Bake in the preheated oven for about 12 minutes, transfer to cooling rack. Makes about 12 cookies, Enjoy!
