Mint Surprise Cookies
Ingredients
- 3/4 cup regular or gluten free all purpose flour
- 1/4 teaspoon baking soda
- 4 tablespoons butter or margarine
- 1 egg
- 1/4 cup light brown sugar
- 1/4 cup sugar
- about 12 Andes mints unwrapped
- about 12 walnut halves
Directions
- Preheat oven to 350°, lightly grease cookie sheet with shortening or margarine.
- In a medium mixing bowl cream together butter and sugars.
- Add the egg and mix together, mix in the flour and baking soda.
- Refrigerate for about 30 minutes, roll in to 12 balls.
- Spread the dough ball around a mint to cover completely.
- Set on cookie sheet and slightly press a walnut half on top of dough.
- Bake in the preheated oven for about 12 minutes, transfer to cooling rack. Makes about 12 cookies, Enjoy!
