Chicken Rice Soup Slow Cooker

Ingredients

  • 1 small boneless chicken breast
  • 3 cups chicken broth
  • 4-5 large carrots, peeled and cut into bite size slices
  • 1 cup frozen Italian green beans, thawed, (optional)
  • 2 green onions, sliced, separate the green and white
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • salt and pepper to taste
  • 2 cups cooked rice, keep warm

Directions

  • In a 2 quart slow cooker, set on high, add carrots, then chicken, and seasonings, add the white part of sliced onions.
  • Pour in the chicken broth, let cook for about 2&1/2 hours, add the Italian green beans, let cook for about another 1/2 hour, until chicken is done.
  • The cooking time depends on your slow cooker.
  • Take out chicken and place on a plate, cut into pieces. Add back in to the slow cooker, stir.
  • Serve in bowls, and add a packed scoop of rice in the center of bowl. Top with green onions.
  • Salt and pepper to taste. Serve and Enjoy!
