Ground Beef and Peppers over Rice
Ingredients
- 1 pound lean ground beef, browned and drain any fat, I used 90/10
- 1 large green pepper, sliced
- 1 tablespoon lite soy sauce
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 1 cup beef broth, lower sodium or regular
- salt and pepper to taste
- 2 tablespoons butter
- 1 tablespoon corn starch
- 1/4 cup water, mix with cornstarch for thickening
- 3 cups cooked rice, keep warm
Directions
- In a skillet on medium heat add the ground beef, break up, cook until browned, drain fat if needed.
- Add the green pepper slices, stir fry with the ground beef for a few minutes.
- Stir in the garlic and onion powder, soy sauce, add the beef broth, let cook for a few minutes.
- Mix the corn starch with water and stir in to the meat mixture, keep stirring until thickened.
- Add butter, salt and pepper, mix everything together, turn off heat and serve over rice. Enjoy!
