Ground Beef and Peppers over Rice

Ingredients

  • 1 pound lean ground beef, browned and drain any fat, I used 90/10
  • 1 large green pepper, sliced
  • 1 tablespoon lite soy sauce
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 cup beef broth, lower sodium or regular
  • salt and pepper to taste
  • 2 tablespoons butter
  • 1 tablespoon corn starch
  • 1/4 cup water, mix with cornstarch for thickening
  • 3 cups cooked rice, keep warm

Directions

  • In a skillet on medium heat add the ground beef, break up, cook until browned, drain fat if needed.
  • Add the green pepper slices, stir fry with the ground beef for a few minutes.
  • Stir in the garlic and onion powder, soy sauce, add the beef broth, let cook for a few minutes.
  • Mix the corn starch with water and stir in to the meat mixture, keep stirring until thickened.
  • Add butter, salt and pepper, mix everything together, turn off heat and serve over rice. Enjoy!
