Ginger Orange Glazed Chicken Bowl

INGREDIENTS

  • 2 fully cooked frozen chicken breast, thawed and cubed
  • 1/4 cup orange marmalade
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons bbq sauce
  • 2 tablespoons grated fresh ginger
  • 2 cups cooked rice, kept warm
  • fresh ground black pepper to taste
  • 2 dinner size bowls


DIRECTIONS

  • Set heat on medium, in a skillet add the marmalade, bbq sauce, soy sauce, and ginger, stir to mix.
  • Add the cubed chicken, cook for a few minutes until it thickens, turn off heat.
  • Arrange half the chicken in each bowl with about 1 cup of rice in each, and the sides you have chosen. Serves 2. Enjoy!
