Blueberry Muffins

INGREDIENTS

  • 2/3 cup gluten free or regular all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 ripe mashed small banana
  • 1 egg
  • 3 tablespoons sugar
  • 2 tablespoons cooking oil
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla flavor
  • 1/3 cup fresh blueberries

DIRECTIONS

  • Preheat oven to 350°, spray a regular cupcake tin with cooking spray, set aside.
  • In a mixing bowl mash banana, add egg and beat with a fork.
  • Next add the cooking oil, milk, sugar, and vanilla, mix completely.
  • Sift together the flour, baking powder, and baking soda over the wet ingredients, mix in until everything is blended together.
  • Fold in the blueberries, save a few set on top of muffins, before baking.
  • Pour batter in prepared cupcake tin, makes about 4 or 5 muffins. Set a few blueberries on top of muffins, push in lightly.
  • Bake in preheated oven for about 25 minutes or until toothpick entered in center comes out clean. 
  • Set on cooling rack, allow to cool, take muffins out of tin. Serve and Enjoy!
