Black Eyed Peas and Ham Casserole
INGREDIENTS
- 3 cups cooked rice, brown, white or half and half
- 2 cups diced or cubed ham, I had leftover pieces
- 1 can black eyed peas no salt added with liquid,15 ounces
- 1/2 cup shredded sharp cheddar cheese and 1/4 cup for top
- 1/4 cup cream cheese, room temperature
- 2 tablespoons butter
- 3 whole green onions, sliced
- 2 teaspoons no salt garlic and herb seasoning
- salt and pepper to taste
DIRECTIONS
- In a medium sauce pot add the rice, black eyed peas, turn burner on medium, stir to mix.
- Allow some of the liquid to absorb, next add the butter, green onions, and seasoning blend, stir.
- Add the cream cheese and 1/2 cup shredded cheddar cheese, stir to incorporate all the ingredients evenly.
- After cheeses have melted and blended completely, add salt and pepper to taste.
- Turn off burner, pour into a small casserole dish add the 1/4 cup of cheddar cheese on top and top with lid, let sit until cheese is melted, or you can put in microwave for 2 minutes to melt cheese. Serves 2-3 people. Enjoy!
