Savory Belgian Waffles & Sausage Gravy

WAFFLE INGREDIENTS

  • 1 cup regular or gluten free all purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoons salt
  • 1/2 cup sharp cheddar cheese, shredded
  • 2 – 3 green onions sliced, (green part)
  • 2 tablespoons soft butter
  • 3/4 cup milk
  • 2 eggs

WAFFLE DIRECTIONS

  • Plug in Belgian waffle maker, set on light, medium dark, or number for desired doneness color. I used #5, I like crisper darker Belgian waffles.
  • In a medium mixing bowl add eggs, beat with a fork, next add milk beat together with fork.
  • Add the, flour, baking powder, butter, and salt, stir in and mix completely.
  • Next fold in the cheese and green onions until mixed in evenly.
  • When ready light is on add about a full 1/2 to 2/3 cup of batter to the middle of waffle maker, this will depend on the size of your waffle maker and the size of the waffles you want.
  • Follow manufacturer cooking instructions for your Belgian waffle maker.
  • When ready light comes on check waffle to see if it will lift out easily, that is when waffle should be done.
  • Transfer waffle to a cooling rack, repeat with remaining batter, should make 2 large or 4 smaller waffles, this will depend on how big you want your waffles to be. Serve with the sausage gravy on top, (recipe below), or make your own favorite sausage gravy. Enjoy!

GRAVY INGREDIENTS

  • 1/2 pound lean ground pork, crumbled and cooked, drain fat if needed
  • 1/2 teaspoon ground sage, (add some fresh too if you have)
  • 1/2 teaspoon dried thyme, (add some fresh to if you have)
  • 1/2 teaspoon salt, more to taste, if needed
  • 1 teaspoon fresh ground pepper, more if you like
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 2 tablespoons butter
  • 3 tablespoons regular or gluten free flour
  • 2 cups milk, whole milk or 2%

GRAVY DIRECTIONS

  • Cook ground pork in skillet on medium heat, crumble to smaller pieces, drain fat if needed.
  • Next add all the herbs and spices, stir to incorporate all evenly.
  • Add the butter to melt, stir then sprinkle flour evenly over meat.
  • Slowly add milk, keep stirring, it will start to thicken, if it gets to thick add a little more milk at a time. Cook to your desired thickness of gravy.
  • Turn burner to simmer/low, cut biscuits in half lengthwise, set on plate and spoon sausage gravy over waffles. Turn off burner. Serves 4. Serve and Enjoy!
