Green Onion and Swiss Cheese Omelet
INGREDIENTS
- 2 eggs
- 1 ounce swiss cheese slice
- 2 green onions sliced
- pat of butter
- salt and pepper to taste
DIRECTIONS
- In a small bowl beat eggs with a fork and add in sliced green onions, mix.
- Turn heat on medium, in a small skillet add butter to melt. Next the eggs, allow to cook for a couple of minutes, turn burner on low.
- When the eggs are almost cooked and set, top eggs with half slice of cheese on each side of eggs, leaving a space in between each slice of cheese, this will make folding egg in half easier.
- Fold eggs in half with spatula, allow to cook about 30 seconds and flip to cook other side for 30 seconds.
- Top with extra cheese and green onion, if you like, transfer to a plate and serve. Enjoy!
