Banana Oatmeal Pecan Cake


 Banana Oatmeal Pecan Cake – Gluten Free

  • 3/4 cup gluten free flour (measure to measure, or 1-1, etc…)
  • 1/2 cup quick oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 – 1/2 teaspoons cinnamon
  • 2 eggs
  • 1 medium / large mashed banana
  • 1/3 cup oil
  • 1/3 cup milk
  • 1/2 cup light brown sugar
  • 1/2 cup chopped pecans

  • Mix eggs, mashed banana, oil, light brown sugar, and milk, together, completely stir to completely blend
  • Add flour, quick oats, baking powder, baking soda, cinnamon, to the wet ingredients, except pecans, mix to blend
  • Pour into sprayed 8×8 square pan, spread pecans on top of batter
  • Bake @ 350° for about 25 minutes
  • Cool completely and frost or glaze, your choice, garnish top with more pecans (optional)
  • Make sure to choose Gluten Free ingredients to make it gluten free.
