Banana Oatmeal Pecan Cake
Banana Oatmeal Pecan Cake – Gluten Free
- 3/4 cup gluten free flour (measure to measure, or 1-1, etc…)
- 1/2 cup quick oats
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 – 1/2 teaspoons cinnamon
- 2 eggs
- 1 medium / large mashed banana
- 1/3 cup oil
- 1/3 cup milk
- 1/2 cup light brown sugar
- 1/2 cup chopped pecans
- Mix eggs, mashed banana, oil, light brown sugar, and milk, together, completely stir to completely blend
- Add flour, quick oats, baking powder, baking soda, cinnamon, to the wet ingredients, except pecans, mix to blend
- Pour into sprayed 8×8 square pan, spread pecans on top of batter
- Bake @ 350° for about 25 minutes
- Cool completely and frost or glaze, your choice, garnish top with more pecans (optional)
- Make sure to choose Gluten Free ingredients to make it gluten free.
