Shrimp Spinach and Squash Rotini



Shrimp Spinach and Squash over Gluten Free Rotini Pasta

  • 12 large shrimp, boiled and peeled
  • 3 large handfuls of fresh spinach
  • 1 small yellow squash, sliced
  • 1 small zucchini, sliced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 6 ounces cooked to package directions, gluten free pasta, I used rotini
  • Salt and fresh ground pepper to taste
  • Grated cheese

  • In frying pan on medium heat add butter and olive oil
  • Add yellow and zucchini squash, spices and cook until tender on both sides
  • Add spinach and toss until wilted
  • Add cooked and peeled shrimp toss everything together until heated through
  • Serve over hot pasta and garnish with grated cheese
  • Add fresh cracked pepper and salt to taste
