Shrimp Spinach and Squash Rotini
Shrimp Spinach and Squash over Gluten Free Rotini Pasta
- 12 large shrimp, boiled and peeled
- 3 large handfuls of fresh spinach
- 1 small yellow squash, sliced
- 1 small zucchini, sliced
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 6 ounces cooked to package directions, gluten free pasta, I used rotini
- Salt and fresh ground pepper to taste
- Grated cheese
- In frying pan on medium heat add butter and olive oil
- Add yellow and zucchini squash, spices and cook until tender on both sides
- Add spinach and toss until wilted
- Add cooked and peeled shrimp toss everything together until heated through
- Serve over hot pasta and garnish with grated cheese
- Add fresh cracked pepper and salt to taste
