Chicken Barley Soup - Slow Cooker
Chicken and Barley Soup with Baby Carrots
- 1 chicken breast or 2 thighs boneless
- 32 ounce chicken broth
- 1 package baby carrots (12 ounce)
- 1/4 cup pearl barley
- 1/4 cup chopped onion (optional)
- 1 teaspoon paprika
- 1teaspoon garlic powder
- 1 teaspoon parsley
- 2 teaspoons olive oil
- Salt and Pepper to taste
- Chopped green onion tops (garnish top when serving)
- Place everything in slow cooker, cook about 4 hours on high
- Take out chicken let cool a little, dice and put back in slow cooker
- Garnish with chopped green onion tops and serve
