Zucchini Bread Mini Loaves
Ingredients
- 1/2 cup regular or gluten free all purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 egg
- 3 tablespoons plain yogurt
- 3 tablespoons sugar
- 3 tablespoons light brown sugar
- 2 tablespoons cooking oil
- 1/2 cup shredded zuchinni
Directions
- Preheat oven to 350°, spray two mini loaf pans with cooking spray, set aside.
- In a medium mixing bowl add the egg, cooking oil, sugars, and plain yogurt, mix everything together beat with a fork until blended. Stir in zucchini.
- Add the flour, baking powder, baking soda, and cinnamon beat until everything is blended.
- Pour batter into the prepared mini loaf pans, evenly distributed.
- Bake in the preheated oven for about 30 minutes or until a toothpick inserted in middle comes out clean. Remove from oven to a cooling rack.
- Slice and Serve warm or cooled taste good with, glaze, butter, or cream cheese, Enjoy!
