Zucchini Bread Mini Loaves

Ingredients

  • 1/2 cup regular or gluten free all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 egg
  • 3 tablespoons plain yogurt
  • 3 tablespoons sugar
  • 3 tablespoons light brown sugar
  • 2 tablespoons cooking oil
  • 1/2 cup shredded zuchinni

Directions

  • Preheat oven to 350°, spray two mini loaf pans with cooking spray, set aside.
  • In a medium mixing bowl add the egg, cooking oil, sugars, and plain yogurt, mix everything together beat with a fork until blended. Stir in zucchini.
  • Add the flour, baking powder, baking soda, and cinnamon beat until everything is blended.
  • Pour batter into the prepared mini loaf pans, evenly distributed.
  • Bake in the preheated oven for about 30 minutes or until a toothpick inserted in middle comes out clean. Remove from oven to a cooling rack.
  • Slice and Serve warm or cooled taste good with, glaze, butter, or cream cheese, Enjoy!
