Bacon Cheddar Spinach Omelet
Ingredients
- 2 eggs, beaten with fork
- 2 cups fresh spinach
- 2 slices cooked bacon, cut up, uncured or regular
- 1 tablespoon butter
- 3 tablespoons cheddar cheese
- salt and pepper to taste
Directions
- Turn burner on medium, in a small skillet add half of the butter to melt, add fresh spinach cook until wilted down, place cooked spinach on a plate and set aside.
- Turn burner down to low, add the remaining butter to melt.
- Add the beaten eggs and let spread on bottom of skillet, spread bacon pieces over eggs, a sprinkle cheese over eggs.
- Let cook a minute or so until eggs are a little firm, spread spinach on one side half of eggs, fold egg with spatula in half.
- Flip omelet over to other side and let cook for about a minute, cook longer if you want the eggs totally firm.
- Place on plate, top with more cheese and bacon pieces if you like. Serve with your favorite breakfast sides. Enjoy!
