Italian Sausage Lasagna

Italian Sausage Lasagna
Ingredients
- 10 ounce box gluten free oven ready lasagna noodles, use about 8 noodles, or use regular noodles, if you don’t want gluten free
- 1 pound ground Italian sausage
- 1 jar of your favorite spaghetti sauce, 24 ounces
- 8 ounce can tomato sauce
- 1 teaspoon Italian seasoning
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon garlic and herb no salt seasoning
- 1 tablespoon minced dried onions
- Ricotta Cheese Mixture
- 1 container ricotta cheese, 15 ounces
- 1&1/2 cups shredded mozzarella cheese
- 2 eggs, lightly beaten with fork
- 1 teaspoon dried basil or fresh if you have it
- salt and pepper to taste
- Topping Last Layer
- 1/2 cup grated mozzarella for top
- 1/4 cup grated parmesan cheese, for top and extra for table when serving
Directions
- Turn burner on medium. In a large skillet, brown the Italian sausage breaking up into smaller pieces with wooden spoon while cooking. After browned drain excess fat if needed.
- Add the spaghetti sauce, tomato sauce, and the seasonings, stir until everything is combined.
- Turn burner down to low/simmer for about 20 minutes. Stirring occasionally.
- Next preheat oven to 375°, spray 2 loaf pans (9×5) with cooking spray, set aside.
- In a mixing bowl combine the eggs, ricotta, 1&1/2 cups of the shredded mozzarella, basil, salt and pepper to taste. Combine until everything is thoroughly mixed.
- Layering: start with sauce in the bottom, then lasagna noodle, spread some ricotta mixture, repeat with 3 more layers ending top with sauce, (should use 4 lasagna noodles in each loaf pan).
- Finish by sprinkling some mozzarella and parmesan cheese on top.
- Place on baking sheet, Bake in preheated oven for 45 minutes.
- Remove from oven and allow to sit for about 10 minutes before cutting. Each loaf pan Serves 3. Enjoy!
