Ground Chicken Black Beans Rice
INGREDIENTS
- 1 pound lean ground chicken
- 1 can tomatoes with green chilis, (rotel) 10 ounces
- 1 can petites diced tomatoes, 15 ounces
- 1 can black beans, drained and rinsed
- 1/2 cup chopped onions
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1 tablespoon garlic and herb seasoning
- 1/2 cup instant rice, (minute rice)
- 8 ounces shredded cheddar cheese
- Sour Cream when serving
DIRECTIONS
- Turn burner on medium, In a large skillet add the ground chicken, break it up and brown on all sides.
- Add the onions stir and cook a few minutes, now add both cans of tomatoes and all the seasonings.
- Stir in the black beans, cook for about 10 minutes, next stir in the rice, turn burner down to simmer and cook for another 10 minutes with a lid, to cook rice.
- Serve with the shredded cheese on top and sour cream. Serves about 4. Enjoy!
