Tomato Swiss and Sausage Omelet

Ingredients

  • 2 eggs
  • 1 small cooked sausage patty, cut up
  • 2 slices tomatoes, take out seeds and pat dry, helps so the eggs don’t get soggy inside.
  • 1 to 2 ounces shredded Swiss cheese
  • salt and pepper to taste

Directions

  • In a small skillet add small pat of butter, turn burner on low medium. Add cut up sausage.
  • In a small bowl beat eggs with a fork, pour in skillet over sausage.
  • While eggs cook roll and tilt skillet to disperse eggs around edges to cook until your desired doneness of eggs.
  • Lay the slices of tomatoes on one half of the eggs, then sprinkle with half of the cheese, fold egg in half over cheese. Cook for about 30 seconds then flip over to other side with a spatula, for about another few seconds.
  • Sprinkle remaining cheese on top. Transfer to plate, Serve and Enjoy!
