Toasted Coconut Mini Donuts

INGREDIENTS

  • 1/2 gluten free or regular baking mix
  • 1 egg
  • 3 tablespoons sugar
  • 3 tablespoons milk
  • 2 tablespoons cooking oil
  • 1 tablespoon sweetened coconut (for batter)

DIRECTIONS

  • Preheat the donut maker, brush lightly with oil, if needed.
  • Mix top six ingredients in a medium bowl
  • Fill up donut cavities with batter, close lid, bake for about 3-5 minutes until golden brown. Repeat until batter is gone.
  • Transfer each batch to a plate, dip donuts on both sides in the glaze, then dip donuts on top side in the toasted coconut.
  • Set on a serving plate, makes 12 mini donuts, Enjoy!

Prepare toasted coconut and glaze while donuts are baking:

Toasted Coconut: spread about 3 tablespoons sweetened coconut in baking pan, set pan in 400° oven for a couple of minutes, until desired golden color, watch closely so not to burn. Remove from oven place on a plate , set aside.

Glaze: mix about 1/2 cup powdered sugar with a couple tablespoons milk, mix with fork until blended. Thick but not stiff, to dip donuts, set aside.
