Happy Fourth of July Shortcake

INGREDIENTS

  • 3/4 cup baking mix, gluten free or regular
  • 1 egg
  • 1/2 cup milk
  • 1/3 cup sugar
  • 3 tablespoons cooking oil
  • 1/2 teaspoon vanilla extract
  • 1 quart strawberries
  • half and half or cream for serving on the plate (optional)

DIRECTIONS

  • Preheat oven to 350°, spray a 6 inch round baking pan with cooking spray, set aside.
  • In a medium size mixing bowl add the egg, milk, and oil, beat together with a fork.
  • Mix in the sugar and the vanilla, next add the baking mix stir until everything is completely mixed.
  • Bake in preheated oven for about 30-35 minutes, or until a toothpick entered in center comes out clean.
  • Set on cooling rack to cool completely.
  • Frost and decorate if you like, Serve with fresh sliced strawberries and a couple tablespoons of half and half or cream in the bottom of the plate. Serves 4-6. Enjoy!
