Stewed Tomatoes Rice with Black Eyed Peas

INGREDIENTS

  • 1 cup rice uncooked and rinsed
  • 1 can diced tomatoes, 15 ounces
  • 1 can black eyed peas, drained and rinsed
  • 1/2 cup frozen holy trinity mix, (bell peppers, celery, and onions chopped)
  • 2 tablespoons butter
  • 1 teaspoon onion powder
  • 1 teaspoon salt free original seasoning blend
  • 1/3 cup water
  • salt and pepper to taste

DIRECTIONS
  • I have 6 cup simple basic rice cooker, with one cook cycle and it works great, after cook cycle it automatically switches to warmer.
  • In the rice cooker add the rinsed rice, tomatoes, black eyed peas, chopped vegetables, onion powder, seasoning blend, butter, water, salt and pepper.
  • Stir to mix everything, place lid on top and push button down to cook.
  • After cycle ends, stir and fold everything together, to blend before serving. Serves about 4 as a side dish. Don’t forget to unplug rice cooker. Enjoy!
