No Flour Cornbread

 

Sometimes I like a flat cornbread, to cut in smaller pieces to eat with soups and stews. It’s easy to make, all You have to do is put batter in a bigger pan spread thinner or put in individual baking dishes with less batter.  Or fry in a skillet, make hoe cakes.



Cornbread made with Cornmeal only, no added Flour.

1 cup white cornmeal

1 cup buttermilk

1 egg, slightly beaten with fork

1/2 teaspoon baking powder

1/2 teaspoon baking soda

Pinch of salt


In bowl mix egg and buttermilk add in cornmeal and baking powder.

Mix completely, if it looks to thick add about 1/4 cup more of buttermilk.

Pour batter into a greased baking pan or heated iron skillet, about 8 inch round.

Also can bake in individual baking dishes or a loaf pan.

Bake in a preheated oven @ 425° for about 25 minutes.
