Mincemeat Muffin Tops
Mincemeat Muffin Tops made with Quinoa Flour are not very pretty, but taste really good!
Mincemeat Muffin Tops made with Quinoa Flour
- 1 cup quinoa flour or regular flour
- 1/2 teaspoon baking powder
- pinch of salt
- 1 cup mincemeat (3/4 to put in batter and 1/4 cup for top)
- 1 egg
- 1/4 cup light brown sugar
- 1/4 cup oil
In a mixing bowl add egg, oil, light brown sugar, and 3/4 cup mincemeat, stir to completely blend.
Add flour, baking powder, and pinch of salt, mix together
Fill sprayed, with cooking spay, muffin top pan level with cavity, do not over fill, they might be hard to take out of the pan.
Spoon a little mincemeat on top of batter, push down with spoon to make a small indentation in batter.
Bake in a preheated oven @ 350° for about 12 minutes. Makes 8 muffin tops.
Cool on cooling rack. I added a piece of pecan, to make them look prettier, optional.
