Sausage Potatoes and Peppers

 

Sausage, Potatoes and Peppers for Breakfast, Brunch, Lunch, or Dinner

  • 2 sausage links sliced, the dinner size links, I used fully cooked Chicken apple gouda links
  • 3 small or 2 medium potatoes sliced, peeled or u peeled – your choice
  • About 1/2 cup, more if you like, peppers, I used frozen pepper trio, it has green, red, yellow peppers slices in the bag.
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • Salt and fresh ground pepper to taste



In a skillet on medium heat add the olive oil and butter, add sliced potatoes and cook until tender, flipping often to evenly cook.

When potatoes are tender add the sliced sausage and peppers.

Keep flipping with spatula to completely heat through.

The sausage I used was fully cooked, it doesn’t take long to cook.

If you use raw sausage you will have to cook to the correct temperature and make sure it is fully cooked.

Eat alone or with toast, eggs, pancakes, waffles, etc…
