Savory Chicken and Mushrooms

  • 1 boneless skinless chicken breast, about 1/2 pound cut into pieces
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 4 ounces fresh or canned mushrooms
  • 2 cups chicken broth
  • 2 stalks green onions chopped
  • 2 teaspoons umami seasoning ( available at target for and affordable price)
  • 3 or 4 tablespoon cornstarch, for thickening

In a skillet on medium add olive oil and butter, add chicken pieces, salute until opaque.

Add mushrooms, stir together, add umami seasoning, salt and pepper to taste.

Stir in chicken broth, simmer for about 20 minutes.

In a small cup add the cornstarch to a small amount of water, stir to dissolve.

Add to chicken and mushrooms cook until thickened.

Serve over pasta, rice, or mashed potatoes.
