Apple Gouda Chicken Sausage with Sauerkraut & Red Potatoes

 

Apple Gouda Smoked Chicken Sausage with Sauerkraut & Red Potatoes

  • 2 fully cooked apple gouda smoked chicken sausage links (they usually come in a package of 4)
  • 1 can or jarred or bagged sauerkraut, drained, about 15 ounces
  • 1/2 cup unsweetened applesauce
  • 2 red potatoes, cut in to 8 pieces each
  • 1/2 cup water
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/4 teaspoon caraway seeds, optional
  • fresh parsley for garnish, optional
  • salt and pepper to taste

In a skillet add olive oil and butter, turn heat on medium.

Add drained sauerkraut to skillet and toss a couple of minutes to fry a bit and heat.

Stir in applesauce and caraway seeds.

Add water and the potatoes cut up, spread evenly in skillet.

Cover with lid and turn heat down to low/simmer for about 30 minutes or until potatoes are tender all the way through.

Next, set the sausages on top the sauerkraut and cover with lid for about 15 more minutes on simmer, to completely heat the sausages all the way through. The sausages are smoked and fully cooked so basically they just need to be cooked to heat through.
