Bacon Maple Oatmeal Breakfast Muffins

 Make ahead Easy Grab and Go Breakfast or just a really good tasting muffin.


Bacon Maple Oatmeal Breakfast Muffins

  • 1 & 1/3 cup regular or gluten free pancake mix, I used gluten free
  • 2/3 cup quick oats
  • 2 eggs, slightly beaten with fork
  • 3/4 cup milk
  • 1/4 cup cooking oil
  • 1/3 cup Maple syrup
  • 1 jar or bag of real bacon pieces, about 2 ounces or more
  • light brown sugar to sprinkle on top before baking, optional

Mix eggs, oil, maple syrup, milk, and oil in a medium size mixing bowl.

Add pancake mix and oatmeal, mix in completely

Stir in half of the bacon pieces.

Pour batter into prepared muffin pan, each about 3/4 full.

Sprinkle each top with a little light brown sugar, and a few pieces of bacon, if you like.

Bake @ 350° preheated oven for about 20-25 minutes, depends on the size of your muffin pan.

Take muffins out of pan and cool on rack.

Makes about 6-8 muffins, depends on the size of your muffin pan.

I pop leftovers in freezer.
