Mandarin Orange Upside Down Cake





 Easy Mandarin Orange Upside Down Cake, can be made with Gluten Free or Regular Pancake Mix. Baked in a 6 inch springform pan.



Mandarin Orange Upside Down Cake

  • 5 or 6 mandarin oranges, peeled and cut lengthwise in half
  • 1 cup pancake mix, regular or gluten free
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup sugar
  • 1/4 cup oil

Spray a 6 inch springform baking pan with cooking spray.

Place mandarin oranges in baking pan, flat side down, set aside.

In a mixing bowl add egg, sugar, milk, and oil mix with a fork to blend together.

Add pancake mix stir to completely blend everything together.

Pour batter slowly over the top of oranges.

Place baking pan on top of a cookie sheet in preheated oven @ 350° for about 40-45 minutes.

Let cake cool, run a knife along edges to loosen, unlock spring, and take off.

Place a plate over cake and turn over slowly to release cake from pan.

Sprinkle with powdered sugar, cut and Serve.
