Quinoa Flour Fudgy Muffins – The Prune Filling makes these Muffins Fudgy.
Quinoa flour has a strong aroma, to me it smells earthy, and taste earthy. Some say its aroma gives off a grass like smell and taste a little bitter.
I found when using quinoa flour its best to use ingredients that can compliment the earthy taste. Ingredients like cinnamon, bananas, maple syrup, bacon, oatmeal, chocolate, pecans, and walnuts are the ingredients I have used with good results.
Quinoa Flour Fudgy Muffins
- 2/3 cup quinoa flour
- 1/3 cup baking cocoa
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- pinch salt
- 1/3 cup sugar
- 1/3 cup prune filling/prune butter
- 2 eggs
- 1/2 cup milk
- 1/4 cup cooking oil
In a medium mixing bowl mix together eggs, oil, milk, prune filling until blended.
Add quinoa flour, baking powder, baking soda, baking cocoa, and pinch of salt, mix completely.
Spray cupcake pans with cooking spray, fill 3/4 full with batter.
Bake @ 350 ° for 18 – 22 minutes, depending on the size of your cupcake pans.
Makes 4-6 muffins depends on the size of your cupcake pans.
Frost with your favorite frosting or dust with powdered sugar.
Chocolate Cream Frosting
- 1 can table cream, 7.6 ounce
- 1/2 cup powdered sugar
- 1/3 cup baking cocoa
In a medium mixing bowl whip cream with hand mixer with whisk attachment on high for about a minute or two.
Add powdered sugar and whip again for a minute or two, mixture starts to thicken.
Now add baking cocoa and whip until it becomes frosting consistently, refrigerate while muffins are cooling.
Frost muffins. Frosts about 6 – 8 muffins.
