Apple Dumpling Skillet Cobbler
Apple Dumpling Skillet Cobbler – Make it Gluten Free or Regular, I made it Gluten Free.
Apple Filling
- 1 can apple pie filling, about 21 ounces
- 1/2 cup water
- 1 tablespoon butter
- 1 teaspoon cinnamon
In a 10 inch skillet, add all the apple filling ingredients mix.
Turn heat on medium, bring to a boil.
Turn heat down to low and let cook, while preparing batter.
Dumpling Batter
- 1 cup pancake mix, regular or gluten free
- 1 egg, slightly beaten with fork
- 1/3 cup milk
- 2 tablespoons sugar
- 2 tablespoons melted butter
In a medium mixing bowl, mix together by hand all ingredients until smooth.
Drop batter by spoonfuls evenly on top of apple filling. I sprinkled a little cinnamon on top of batter, optional.
Let simmer for about 10 minutes, batter will start to puff up.
Meanwhile pre-heat oven @ 400°.
After cooking on top of stove 10 minutes, set the skillet on top of a baking sheet and set in oven. Bake for 15 minutes, until golden.
Test dumplings doneness when knife or toothpick inserted comes out clean.
Serve hot or warm. Add whipped cream, or ice cream.
