Banana Pecan Mini Loaves
Ingredients
- 1/2 cup gluten free or regular flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 ripe mashed medium banana
- 1 egg
- 1/8 cup milk
- 1/4 cup light brown sugar
- 1 tablespoon cooking oil
- 1/2 teaspoon vanilla
- 1/4 cup chopped pecans
- 2 small loaf pans, 6x3x2
Directions
- Preheat oven to 350°, spray loaf pans with cooking spray, set aside.
- In a medium mixing bowl mix together mashed banana, egg, cooking oil, milk, vanilla, and light brown sugar, beat with fork until blended.
- Add flour, baking powder, and baking soda, mix in completely.
- Stir in pecans, pour in to prepared loaf pans, Bake about 25-30 minutes, until toothpick inserted comes out clean.
- Set on cooling rack to cool. Take out of pans to slice and serve.
- Drizzle with glaze, if you like. Enjoy!
